4 Ingredient Watermelon Salad

We all have those times when you have last minute company coming over or a last minute dinner at a friends house. There is this moment of panic over what the heck you can make in a pinch, that tastes yummy and won’t derail your health goals. This homemade watermelon salad is just the solution to your problem.

You will be shocked how quickly this salad comes together. I am not joking you only need 4 simple ingredients.

  • Organic Mini Watermelon
  • Organic Blueberries
  • Feta Cheese
  • Fresh Mint

The watermelon, blueberries and feta cheese all came from Costco. You can buy the mint at your local grocery store. I grew this mint in my garden. Not sure if you have ever grown mint before but I thought it would be a fun addition to the garden. Well I had no idea that it would take over and that most people plant them in their own pots for that reason. Mint is a great herb because it’s hardy and comes back every year, but you definitely need to cut back what you don’t want and all of the new little guys that pop up. Lesson learned…hahaha. Next time plant in a pot!

This salad really couldn’t be easier. First cut up your watermelon and add to a large bowl. Then add your blueberries, chopped mint and feta chunks. Mix until combined. You can serve immediately or I like to leave in the fridge for a couple hours so that the flavors can marinate together.

This salad is great for potlucks, family gatherings or just for yourself at home. Your friends and family will be impressed by this healthy and refreshing Summer salad.

Ingredients

  • 1 Mini Organic Watermelon
  • 2 Cups Organic Blueberry
  • 8 oz Feta Cheese I used the block but you can use crumbles
  • 3 tbsp Fresh Mint

Instructions

  • Cut up watermelon and add to a large bowl
  • Add blueberries to watermelon.
  • Cut feta up into bite pieces and add to the bowl.
  • Finely chop mint and add to the other ingredients.
  • Mix together and done!
