Air Fryer Zucchini Burgers

The Ultimate Veggie Burger

These veggie burgers are everything you didn’t know you needed in a vegetable recipe. I came up with these as a play off of my Zucchini Pizza Crust Once I had the pizza crust figured out, I thought that if I made them smaller and thicker they would be a great veggie burger. I dressed them up just like any burger and enjoyed a meatless Monday. Using the air fryer gave them a nice burger texture, crunchy on the outside but soft on the inside.

These zucchini burgers are a great option when trying to get rid off all that Fall garden zucchini. I love finding new ways to use the garden vegetables so that the fruits of my labor don’t go to waste.

Making the Zucchini Burgers

First shred your zucchini and squeeze the water out with a towel. (honestly I forgot this step in one of my tests and it still turned out fine. Just took a little longer cooking.) Add your zucchini to a large bowl and mix in your chopped onion and celery.

Next up add your spices, flours, eggs (beaten) and mix thoroughly.

Once everything is mixed together go ahead and grab your air fryer. Spray with a bit of avocado oil and using your hands grab a portion of your zucchini mixture and roll into a ball. I would plan to make 6 even sized balls. Place them on a plate or a baking sheet with parchment paper. Press down to form a “burger”, then using a spatula transfer to the air fryer. Even though these do stay together pretty well they are still going to be softer than meat and need a little finessing when putting into the basket. They will be a little watery…don’t worry that goes away.

Depending on the size of your burgers and the size of your air fryer you can either fit 2-4 in the basket at one time. This recipe should make approximately 6 burgers. Cook in the air fryer at 380 degrees for 10 minutes and then flip and cook another 5. You can cook longer if you want them crispier, it’s totally up to you. If you want to add cheese, open the air fryer after the “burgers” are done put your cheese on and then close the air fryer. The left over heat should be enough to melt the cheese. I would leave in for 2-3 minutes.

How to Dress them up

These zucchini burgers are great dressed up just like a normal burger with all the fixings. Cheese, lettuce, tomato, onion, pickle or add all the extras;

  • Bacon
  • Goat Cheese
  • Fig Jam
  • Avocado
  • Aioli Sauce

There are so many options with this burger, I can’t name them all. They also re-heat well in the microwave or put back in the air fryer for a quick tune up.

  • 5 cups Zucchini Shredded
  • 1/2 cup Celery Chopped
  • 1/4 cup Green Onion Chopped
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1/4 tsp Salt
  • 1/2 cup Almond Flour
  • 2 tbsp Coconut Flour
  • 2 Eggs Beaten


  • Grab your air fryer
  • Shred your zucchini in a food processor and squeeze excess liquid out. Then transfer to a large bowl. (to be honest I forgot to do this on one of my tests and they still turned out fine. Just took a little longer to cook)
  • Add your chopped veggies to the zucchini.
  • Add your spices and mix.
  • Add your flours and beaten eggs. Mix together.
  • Take your zucchini mixture and roll into a ball. (plan to make 6 equal balls)
  • Take your zucchini dough ball, set on a baking sheet or plate and press with your hands to form a circle about the size of a burger. Don't worry they will feel kind of watery but that goes away when you start cooking.
  • Using a spatula transfer to the air fryer. Make sure you hold it together in the transfer. Even though they stay together pretty well they do need careful handling in the beginning.
  • Cook at 380 degrees for 10 minutes, then flip and cook another 5-7 minutes. (or until browned and starting to crisp around the edges) Add cheese and then just close the air fryer for a few minutes. There should be enough heat in there to melt the cheese.
  • Then serve up just like any burger.


This burger is definitely not like regular burger if that is what you are expecting.  This is however a great dairy and grain free option, meatless Monday, add more veggies into your diet or just something fun and new to try. 
Feel free to change up the seasonings: Italian seasoning, fresh herbs…I actually used dried dill and still yummy.
The zucchini burgers re-heat really well.  Either in the microwave or toss back in the air fryer again for a quick tune up.
