Apple Broccoli Salad with Lemon Poppy Seed Vinaigrette

If you have been following us for a while you know that we are all about adding fruit to our salads. The sweet and salty flavor combinations in a big salad make them some of our favorite meals and satisfy all the taste buds.

With apple season in full swing, what better way to enjoy these tasty treats than in a nice big salad. Apples add great flavor to any meal and provide our bodies with all kinds of health benefits.

  • Great source of fiber
  • Assist in digestion
  • Boosts immune system
  • Hydrates skin
  • Vitamin A and C

With all of those great health benefits it seems like a win win with apples…great taste and healthy! All of that being said, let’s get started putting this healthy meal together.

To create this salad I used;

  • Broccoli
  • Apple
  • Carrot
  • Red Onion
  • Pumpkin Seeds

For this salad I chopped the veggies up small and tried to keep the ingredients list to a size that would make this a great recipe you could throw together in 30 minutes or less.

After you have chopped up all of the vegetables, go ahead and start on your homemade Lemon Poppy Seed Vinaigrette.

For the salad dressing you will need;

  • Lemon Juice
  • Avocado Oil
  • Apple Cider Vinegar
  • Raw Honey
  • Onion Powder
  • Garlic Powder
  • Poppy Seeds
  • Water

Using a bowl or a mason jar add all of the ingredients of your dressing and mix well. Especially when using honey because it tends to want to sink to the bottom.

Add your dressing to the salad and let it sit for a couple hours, stirring occasionally to make sure the entire salad is getting coated. You could probably leave the dressing to the side as well.

This flavor filled and nutrient packed meal was a hit with the family. Our apple broccoli salad would be a great potluck option too because the dressing doesn’t have mayo so it would be OK sitting out a bit longer if needed.

I like this recipe because you can have it all year round. It’s light and fresh for Spring and Summer but uses those late Summer and early fall garden fruits and vegetables. Also when you make homemade salad dressing, everyone just thinks you are fancy, little do they know it literally takes 5 minutes to through together.

Ingredients

Salad

  • 2-3 Heads Broccoli Diced
  • 1/2 Large Apple Diced
  • 1/2 Large Carrot Diced
  • 3 Tbsp Red Onion Diced
  • 3 Tbsp Pumpkin Seeds

Lemon Poppy Seed Vinaigrette

  • 2 tsp Lemon Juice
  • 1 Tbsp Avocado Oil
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Raw Honey
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1 tsp Poppy Seeds
  • 2 Tbsp Water

Instructions

  • Dice all of your vegetables and add to a large bowl
  • Mix in your pumpkin seeds
  • Combine all ingredients for the salad dressing into a jar or bowl – mix thoroughly
  • Add the salad dressing to your salad and stir everything together
  • If you have time stick in the fridge – stir every hour or so. Stirring will ensure that the dressing sticks to all of the veggies.
