Chocolate Chip Carrot Oat Bars

Is there anything better than feeling like you can have dessert for any meal! With these healthy Chocolate Chip Carrot Oat bars, you really can. There is something about oats that just reminds me of being a kid at my grandparents house. Oats just have this warm comforting feeling about them.

What I love about this recipe is that it is full of healthy fresh carrots, organic pumpkin and protein packed Greek yogurt. With just a little bit of chocolate to curb your sweet tooth! These bars are great for the week or if you need something quick and healthy for a crowd. I find that these are a wonderful way to sneak extra vegetables into my kids diets.

The options are endless for dressing up these bars.

  • Melted Chocolate
  • Syrup

They taste great cold too, so you can take them while running out the door.

Equipment

  • Blender
  • Food Processor
  • 9" X 13" Baking Pan

Ingredients

  • 2 Cups Shredded Carrots
  • 1 Can Organic Pumpkin Farmers Market is the brand I used
  • 1 Cup Plain Greek Yogurt
  • 1/4 Cup Pure Maple Syrup
  • 2 tsp Vanilla Extract
  • 1 2/3 Cup Oats One Degree Sprouted Rolled Oats are my favorite
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 5.5 tbsp Dark Chocolate Chips – 85g Enjoy Life is the brand I used

Instructions

  • Preheat oven to 350 degrees.
  • Peel carrots and shred in a food processor.
  • Add Pumpkin, carrot, yogurt, maple syrup and vanilla to a blender. Blend until combined.
  • In a separate bowl combine oats, baking soda and salt.
  • Pour wet ingredients in with the dry and stir until combined
  • Add in chocolate chips.
  • Add parchment paper to a 9" x 13" baking pan. Pour mixture in pan and spread evenly.
  • Bake for 30-35 minutes
  • Store in the fridge for 5-7 days
