Easy Sausage and Potato Soup

Soups are one of my go to recipes on cold days but normally I don’t have all day to work on them. I like to have a recipe that can come together in 2 hours or less….hopefully less. This recipe is no different, you can start go from beginning to end in no time.

Soups are a great way to get in those extra veggies and protein and it seems there are always leftovers for easy lunches during the week. I love to make up a huge batch on the weekend to either freeze or feed us for a few meals.

I love this recipe because it requires very few ingredients or time, let me show you.

How to Make Easy Sausage and Potato Soup

Start by chopping up the onion, carrot and celery. When making soups these are my go to soup starters and then I go from there to make the rest.

Set the onion, carrot and celery aside and get your sausage going in a large pot. I use Niman Ranch Sweet Italian Sausage that I get from my imperfect foods. They have really good quality port products and taste great too.

Once your sausage starts to brown, add your onion, carrot and celery. I love to let the veggies cook for a bit in the sausage grease, it provides so much added flavor.

While the sausage and veggies are cooking take that time to chop up your kale and potatoes. When I cook with Kale I always pull the leaves off of the middle stalk. The middle stalk can be hard so it’s best to remove. Then just loosely chop the leaves and set aside.

Chop your potatoes into bite size pieces and set aside. I like to use the organic small red and yellow potatoes that come from Costco.

Once the sausage has cooked completely add your broth and salt. I either use bone broth or vegetable broth. Both work great, I like the health benefits of bone broth but the flavor of the vegetable broth is better to me.

After you have added the broth, add your potatoes and bring to a boil. Once brought to a boil turn down and simmer for 15-20 minutes or until the veggies are soft.

When the vegetables are soft to your liking, remove soup from the heat and stir in the kale.

Let the soup stand for 10 minutes so that the kale can soften up and serve. You can serve with a salad or biscuits or BOTH! Enjoy 💖💖

Ingredients

  • 1 lb Sweet Italian Sausage
  • 1 cup Yellow Onion Chopped
  • 1.5 cups Carrot Chopped
  • 1.5 cups Celery Chopped
  • 8 cups Vegetable Broth **See Notes**
  • 4 cups Kale Chopped
  • 13 oz Small Potatoes I used small red and yellow potatoes
  • 1/2 tsp Salt

Instructions

  • Start by chopping up the onion, carrot and celery.
  • Grab a dutch oven or whatever soup pot you use. Add your sausage to the pan and start browning.
  • Brown for a couple minutes and then add the onion, carrot and celery to the sausage.
  • While the sausage is cooking with the vegetables use that time to cut up your potatoes and kale. Usually takes approximately 15 minutes.
  • When cutting up your kale, I like to pull the leaves from the stalk and then chop loosely. Then set aside
  • Chop your potatoes into bite size pieces and set aside.
  • Once your sausage is cooked through and the veggies have had some time to soak up the sausage flavors add your broth, potatoes and salt.
  • Bring the soup to a boil and then turn down the heat and simmer for 15-20 minutes or until the vegetables have cooked and softened to your preference.
  • Once vegetables are cooked to your liking, remove soup from heat and add the kale.
  • Stir in the kale and let stand for 10 minutes to soften up.
  • Serve up with salad, rolls anything you want!

Notes

**You can use any kind of broth you want.  I like to use bone broth, chicken broth or vegetable broth.  For this recipe I have used all 3.  I do prefer vegetable broth the most just because I feel like it has more flavor.
