Gingerbread Whoopie Pies

I Love a Good Challenge

When my sister-in-law asked me to create a healthier gingerbread cookie, I was excited! I am always up for a good challenge. I was pleasantly surprised when the first batch came out of the oven so fluffy and soft. The family gobbled them right up. As I was brainstorming how to dress these up a bit, I noticed they kind of looked like little burger buns. When you have 2 cookies that look like a burger you must add frosting to the middle right?? OH and sprinkles! Haha

When I started to think about what frosting I would use, there really was no questions. If you have been following us for a while you know my go to frosting is the most basic cream cheese frosting. Cream cheese frosting is so simple to make and so delicious.

I love this Gingerbread Whoopie Pie recipe because it’s easy and something fun you can do with your kids, family or friends. When you add frosting and sprinkles it just takes a boring cookie to something glamorous and fancy.

What is a Whoopie Pie

In text book terms a whoopie pie is two chocolate cake like cookies with buttercream frosting in the middle. I decided that with Christmas coming it would be fun to make some changes to an old classic. The pillow soft gingerbread cookies are melt in your mouth and then when you taste the creamy frosting on the inside you can’t help by smile.

Let’s get Baking

Start by adding all of your dry ingredients to a large bowl.

  • Almond Flour
  • Oat Flour
  • Baking Soda
  • Ground Ginger
  • Nutmeg
  • Cinnamon
  • Coconut Sugar

Mix together and then add your wet ingredients to the bowl.

  • Melted Butter
  • Vanilla Extract
  • Egg
  • Molasses

Once all ingredients are combined use a 1 tablespoon scoop to add the cookies to a baking sheet. Plan for 12 cookies. Bake at 350 degrees for 9-10 minutes.

Let the cookies cool on the baking sheet while you make your frosting.

Easy Peasy Frosting

Did you know you could make great tasting frosting with only 3 ingredients?

  • Cream Cheese
  • Coconut Sugar
  • Pure Maple Syrup

Make sure all ingredients are mixed together thoroughly, I like to use a hand mixer as cream cheese can be a little tough to stir with your hands. Mix until light and fluffy.

Now you can put the frosting and cookies together and make your whoopie pies! This recipe should make 6 pies. You can leave them without sprinkles or roll them in sprinkles like I did.

Ingredients

Gingerbread Cookie

  • 1/2 cup Almond Flour
  • 1/2 cup Oat Flour
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Ginger
  • 1/2 tsp Nutmeg
  • 1/4 tsp Cinnamon
  • 2 tbsp Coconut Sugar
  • 1 tbsp Butter Melted
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 1 tbsp Molasses

Frosting

  • 6 oz Cream Cheese Softened
  • 1 tbsp Coconut Sugar
  • 2 tbsp Pure Maple Syrup

Instructions

Cookies

  • Preheat the oven to 350 degrees and remove cream cheese from the fridge so that it can soften up.
  • Add all dry ingredients for the cookie into a large bowl and mix.
  • Add your wet ingredients to the bowl with dry ingredients and mix until combined.
  • Using a 1 tablespoon scoop, scoop your batter onto a baking sheet to make 12 cookies.
  • Bake for 9-10 minutes
  • Let cool

Frosting

  • Add softened cream cheese, coconut sugar and syrup to a bowl and mix using a hand mixer until light and fluffy.

Making the Whoopie Pies

  • Once the cookies have fully cooled add a your frosting to the flat bottom side of one of the cookies and then add another to make a sandwich.

Notes

Store in the fridge for 2-3 days
