Strawberry Peach Crisp with a Twist

Summer is just around the corner and with so much fruit in season right now why not blow family away with this Strawberry Peach Crisp with a Twist! Our recipe is a healthier take on a classic dessert.

Fruit desserts always take me back to 4th of July and time spent with family and friends. The organic strawberries and peaches in this dessert will leave you feeling satisfied and content. The wholesome ingredients for this yummy dessert are quite simple and you won’t need much to create this family treasure.

The Base

“With a twist” means that I added a base to this crisp. Most crisps, cobblers and crumbles just have fruit on the bottom but this version has a thin layer of delicious crust. For the base you will need:

  • Almond flour
  • Oat Flour
  • Coconut Sugar
  • Salt
  • Butter

The Fruit Layer

Once the crust has baked and cooled you will then want to add your chopped fruit to the top. Tip – Letting the fruit sit for 10-15 minutes in the lemon juice really brings our the flavors. For the fruit layer you will need:

  • Strawberries
  • Peaches
  • Lemon Juice
  • Pure Maple Syrup

The “Crisp” Layer

Last but definitely not least comes the layer that makes this recipe a crisp. I added a shredded coconut to this recipe for a little flare and somehow coconut feels so tropical. With all of this Washington rain I could use some tropical right now. Here is what you need to create this delicious layer.

  • Oats
  • Almond Flour
  • Shredded Coconut
  • Butter
  • Coconut Sugar

There really are so many options with this classic recipe. You can leave out the base, change up the fruit, serve with ice cream, serve with whipped cream. Have fun with this recipe and YAY for Summer!

  • 1 Cup Organic Peaches – Cut into slices
  • 1 1/4 Cup Organic Strawberries – Cut into bit size pieces
  • 1 Tbsp Lemon Juice
  • 2 Tsp Pure Maple Syrup

  • 1/2 Cup Organic Sprouted Oats
  • 1/4 Cup Almond Flour
  • 1 Tbsp Shredded Organic Coconut
  • 2 Tbsp Melted Butter – Grass Fed
  • 1 Tbsp Coconut Sugar

  • Preheat the oven to 350 degrees
  • Grease an 8×8 baking dish – I used coconut oil.
  • Add all dry ingredients to a bowl.
  • Melt butter and add to dry ingredients. Stir until combined.
  • Pour into your baking dish and press down to evenly cover the bottom of the dish.
  • Bake for 10-12 minutes
  • Let the base cool for 15 minutes before adding the fruit.
  • Go ahead and leave the oven on at 350 degrees.

  • While the base is baking cut and measure your fruit – add to a bowl.
  • Add the lemon juice and maple syrup to the fruit. Stir until combined and set aside
  • Once the base has cooled, pour the fruit into the backing dish.

  • Add all topping ingredients into a bowl and stir until the butter seems to be evenly combined.
  • The topping will seem a little flaky and that is what you want. This way you can take your hands and sprinkle over the top
  • Once you have sprinkled the topping on top of the fruit, put back in the oven uncovered for 20-25 minutes or until the top starts to turn a golden brown.
